Recipe: Stuffed Zucchini Flowers

Cherag Baria, Head Chef at The Distillery Woodfire Restaurant, shares one of our most popular dishes. The inspiration for this dish comes from the vegetable garden on site, where we grow our own flesh herbs and vegetables, as well as edible flowers.

It has a few components which when put together taste and look absolutely divine and can be served as an entree or even a main. The Zucchini flowers are stuffed with Goats Cheese mix, then deep fried with Paprika Tempura Batter and served with parsley oil along with confit artichoke globe, oven roasted tomatoes and lemon.


2 Zucchini Flowers
Lemon Wedge
Artichoke Globe
Tomato on vine
2 lit Vegetable Oil to deep fry
Goats Cheese Mix
250gms Goats Cheese
10ml Full cream milk
¼ Bunch Parsley
Parsley Oil.
½ Bunch Parsley
300 ml Extra Virgin Olive Oil
2 Cloves of Garlic
30ml Lemon Juice
Salt & Pepper to taste
Paprika Tempura Batter
500ml Chilled Soda Water
300gms Self-raising Flour
15gms Mild Paprika
5gms Cooking Salt


Preheat the oven to 150*c. Clean and trim artichoke globe and confit it in vegetable oil for 35 minutes. At the same oven temperature place in the tomatoes on vine coated with olive oil for 8 minutes.

Stuffed Zucchini Flower
Cream together 250gms Goats Cheese, 10ml Full cream milk, ¼ Bunch Parsley and a pinch of black pepper. Clean the innards of the Zucchini flower and stuff it with the goats cheese mix and set aside.

Parsley Oil
Blend together ½ Bunch Parsley, 300 ml Extra Virgin Olive Oil, 2 Cloves of Garlic, 30ml Lemon Juice, Salt & Pepper to taste. Blend together to a smooth consistency.

Paprika Tempura Batter
Place the Chilled Soda Water in a bowl, whisk in 15gms Mild Paprika and 5gms Cooking Salt and slowly add the self-raising flour until you reach a poring cream like consistency. Heat Vegetable oil to 180*c. Dip the stuffed zucchini flowers in the tempura batter, coat lightly and deep fry.
